Batter:
2 c. Sugar
1 c. oil
3 eggs
3 c. flour
3/4 c. cocoa

1 c. buttermilk
2 t. baking powder
2 t. baking soda
1 1/2 t. salt
1/2 c. hot water
1 t. vanilla
Filling:
1/2 c. sugar
2 eggs
2 8 oz. cream cheese
2 t. vanilla
1 c. coconut
1 c. chocolate chips (white or dark or a little bit of both)
Glaze:
3 T. butter
1 t. vanilla
1 t. almond extract (or more)
Powdered Sugar
Milk
Preheat oven to 350 degrees. Grease and flour bundt pan THOROUGHLY.
Combine batter ingredients until smooth. Separately, combine 1st 4 ingredients of Filling until creamy. Stir in coconut and chips. Remove one cup worth of batter and discard [or the cake won't fit into pan while cooking]. Pour batter into pan. Spoon dollops of filling on top of the batter in a ring around the center of the pan. Bake for approximately 60 mins. Use knife to determine readiness. Cool for 5 minutes. Loosen edges with knife, tip upside down, tap to loosen all edges, say a little prayer and lift pan off. Make glaze. Use powdered sugar and/or milk to control consistency. Spoon over cake and ENJOY!!
